Hygiene requirements for food transport

Transport requirements

  • Food managers must comply with the legal hygiene requirements.
  • Vehicles or containers used to transport foodstuffs must be kept clean, in good condition and in good care in order to protect foodstuffs from contamination.
  • The design and construction must be such as to permit proper cleaning and disinfection.
  • During transport, foodstuffs must be transported without violating the integrity of the packaging and avoiding deformation of the packaging, beats and spillage.
  • After each consignment of food, the vehicle must be cleaned, washed or disinfected if necessary.
  • The execution of decontamination and cleaning shall be recorded in special vehicle logs.
  • Cleaning and disinfection can only be carried out by a company authorised and trained for such activities
  • Containers or containers of means OF transport must be used EXCLUSIVELY for the transport of foodstuffs
  • Transport mode, product storage conditions must be discussed in the contract between the carrier and the customer.
  • Together with food, it is forbidden to transport food waste, rubbish and chemicals in the vehicle.
  • Unpacked foodstuffs in liquid, granular or powder form must be transported only in containers or containers/tanks intended for the transport of foodstuffs.
  • Containers used for the transport of foodstuffs must bear the words “for foodstuffs only”.
  • Temperature should be controlled during transport and records recorded.

Transport of quick-frozen 

  • Quick-frozen food temperature – minus 18 ° C or lower in all food storage areas
  • Short-term temperature fluctuations of up to 3 ° C may occur during transport.
  • Deviations in product temperature during local distribution may not exceed 3 ° C.
  • During transport and unloading, the temperature for frozen foodstuffs may not vary by more than +/- 3 ° C

Ways of contamination in the transport of food:

  • Cross-contamination

Food transport documents

  • Freight transport undertakings engaged in the transport of foodstuffs must hold a Certificate of Food Business Operator.
  • The company must ensure the principles of risk analysis and critical control points for transportation services.
  • For a catering company transporting manufactured foodstuffs, the Certificate of Food Business Operator  shall indicate additional activities such as “Supply of prepared meals for events” or “Activities of suppliers of food under contract”.
